rP: that's not possible since R2VB is a rouge extention that ATI did when all others said it's not usefull alone, currently for nvidia you have to use PBOs.
The reason why Nvidia didn't chose to support R2VB is because it's use is a bit limited, for it to be more usefull you need to be able to read from buffers directly, I do think a more complete method of doing this supported by all parties will come pretty soon.
But R2VB shouldn't be used because it's not 100% shure it will be a permanent addition to both dx and openGL and it's not platform independent.

Well, if you want more than 4 components and you still need to support R420 and below you can always just use an interleave pass to put the data into every other pixel. This is done for instance in the Cloth sample in the ATI SDK.

I haven't been able to run either of your demos yet (I'm fairly certain R2VB doesn't work on an ATi Rage Mobility Pro :-D) but it seems like both InfTerrain and the hair demo just modify positions of vertices. If that's the case, have you thought about an idea like this to include extra data in the vertices like normals and such: http://www.gamedev.net/community/forums/topic.asp?topic_id=385509
